Fog is condensation. Warm, humid breath meets a visor that is colder than the dew point, and water leaves the air as droplets. Droplets scatter light in every direction, which is what turns a clear visor into a grey wall.

The same paper names the catch in the very next breath. Once the water film grows past a certain thickness it becomes mobile, which the authors note “often results in image distortion”, and they conclude that hydrophilic antifogging coating “suffers from short-term effectiveness”.

That is a laboratory statement about coatings on glass and acrylic for spectacles, not a test of any motorcycle product. It is worth reading carefully anyway, because it describes the exact two-stage failure riders report: first the view goes smeary and distorted, and later the fog comes back properly.

The five reasons a spray stops working

Work through these in order. Four of the five are things you are doing to the visor, which is good news, because they are all reversible.

Cleaning. Any detergent strong enough to shift bug residue is strong enough to strip a hydrophilic film. Screen wash, glass cleaner and household spray all remove the treatment along with the dirt, usually in a single pass.

Dry wiping. A coating is soft. Wiping grit across it with a glove, a sleeve or a dry cloth abrades it, and abrasion is concentrated exactly where you look through.
